Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 6-8 minutes. Remove and let drain on paper towels.

Prepare the Romaine and Tomato
Chop the romaine lettuce into bite-sized pieces and slice the Roma tomato into thin slices.

Toast the English Muffins
Split the English muffins in half and toast them until golden brown.
Cooking the Eggs and Sauce

Poach the Eggs
Bring a pot of water to a simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes for a soft yolk. Remove with a slotted spoon and drain on a paper towel.

Assemble the Benedict
On each toasted English muffin half, spread 2 tablespoons of sun-dried tomato jam. Layer with romaine, sliced tomatoes, crispy bacon, and top each with a poached egg. Drizzle with hollandaise sauce before serving.
