Method

Banana Bread

  1. 1

    Prepare the Banana Bread

Preheat your oven to 350°F (175°C). In a large mixing bowl, mash the ripe bananas until smooth. Stir in the melted butter, sugar, eggs, and vanilla extract until well combined.

  2. 2

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the banana mixture, stirring until just combined. If desired, fold in chopped walnuts.

  3. 3

Pour the batter into a greased loaf pan and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before slicing.

French Toast

  1. 4

    Prepare the French Toast Mixture

In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract.

  2. 5

Heat butter in a skillet over medium heat. Dip each slice of banana bread into the egg mixture, ensuring both sides are well coated.

  3. 6

Grill the banana bread slices in the skillet for about 2-3 minutes on each side, or until golden brown.

Espresso Butter

  1. 7

    Make the Espresso Butter

In a mixing bowl, combine the softened butter, espresso powder, and powdered sugar. Mix until smooth and creamy.

Assembly and Serving

  1. 8

    Serve the French Toast

Place the golden brown slices of banana bread French toast on a plate. Spread a generous amount of espresso butter on top.

  2. 9

Drizzle with maple syrup and sprinkle with toasted almonds. Serve immediately.
