Pastry Preparation

Prepare the Puff Pastry
Preheat the oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry sheets to make them slightly thinner. Cut them into squares (about 4x4 inches).

Make the Apple Filling
In a mixing bowl, combine the diced apples, sugar, cinnamon, chopped toasted almonds, honey, and lemon juice. Mix well until the apples are coated evenly.

Fill the Pastry
Place about 1-2 tablespoons of the apple filling in the center of each puff pastry square. Fold the pastry over to form a triangle and seal the edges by crimping them with a fork.

Bake the Turnovers
Place the filled turnovers on a baking sheet lined with parchment paper. Brush the tops with a little melted butter and sprinkle with sugar. Bake in the preheated oven for 20-25 minutes, or until golden brown.

Make the Cinnamon Caramel Sauce
In a saucepan over medium heat, melt the granulated sugar until it turns golden brown. Carefully stir in the heavy cream and butter until smooth. Add cinnamon and vanilla extract, stirring until well combined. Allow to cool slightly.

Serve the Turnovers
Drizzle the cinnamon caramel sauce over the warm apple turnovers. Enjoy!
