Classic Margarita

Method

Classic Margarita

    Prepare glass

    Run a lime wedge around the rim of a rocks or coupe glass, then dip the rim into coarse salt to coat. Set aside.

    Mix

    In a cocktail shaker, combine 2 oz reposado tequila, 1 oz Cointreau, 1 oz fresh lime juice and 0.5 oz simple syrup (omit if you prefer a more tart margarita).

    Shake

    Fill the shaker with ice, secure the lid, and shake vigorously for 10–12 seconds until well chilled and slightly frosty.

    Strain & Serve

    Double-strain (or fine strain) into the prepared glass over fresh ice if serving on the rocks, or without ice into a chilled coupe. Garnish with a lime wheel or wedge.

Cucumber-Basil Gin Fizz

    Muddle

    In a shaker, add 3 cucumber slices and 6 basil leaves with 0.5 oz simple syrup. Gently muddle 6–8 times to release cucumber juice and basil aroma; avoid over-muddling the basil to prevent bitterness.

    Add spirits & citrus

    Add 1.75 oz gin and 0.75 oz fresh lemon juice to the shaker. Fill with ice.

    Shake

    Shake vigorously for 8–10 seconds until chilled.

    Strain & Top

    Double-strain into an ice-filled Collins or highball glass. Top with ~2 oz club soda, stir gently once to combine.

    Garnish

    Thread a cucumber ribbon along the inside of the glass or float it on top, and tuck a small basil sprig as garnish.

Smoked Old Fashioned

    Build

    In a mixing glass, add 0.25 oz demerara syrup and 2 dashes Angostura bitters. Add 2 oz bourbon and fill the glass with large ice.

    Stir

    Stir gently for 20–30 seconds until the drink is well chilled and slightly diluted (about 15–20% dilution).

    Place the stirred cocktail into the serving glass with the large ice cube. Using a smoking gun or by lighting a small wood chip/cinnamon stick and cupping the glass, capture smoke in the glass for 10–20 seconds, then cover with a coaster or a glass to trap the smoke for 20–30 seconds. Remove cover and express an orange peel over the drink (twist to release oils), then drop the peel in as garnish.

Spicy Paloma

    Prepare glass

    Run a lime wedge around the rim of a highball or Collins glass and dip into salt or Tajín to rim. Add a couple of ice cubes.

    Muddle jalapeño

    In a shaker, add 2 jalapeño slices and 0.5 tsp agave nectar. Gently muddle once or twice to release heat and flavor—avoid over-muddling if you want milder spice.

    Mix

    Add 2 oz blanco tequila, 2 oz fresh grapefruit juice and 0.5 oz fresh lime juice to the shaker. Fill with ice.

    Shake & Strain

    Shake vigorously for 8–10 seconds. Double-strain into the prepared glass over fresh ice.

    Top & Garnish

    Top with ~2 oz club soda or grapefruit soda and stir gently. Garnish with a grapefruit wheel or a jalapeño slice.
