Make quick pomegranate-lime syrup
Combine granulated sugar and 2 tablespoons water in a small saucepan over medium heat. Stir until sugar dissolves and mixture just begins to simmer, about 2–3 minutes. Remove from heat and let cool 2 minutes. Stir in the pomegranate juice and fresh lime juice until fully combined. If you like a slightly tangier concentrate, whisk in 1/2 teaspoon pomegranate molasses now. Chill briefly if not using immediately (5–10 minutes). This yields about 1 1/4 cups base.

Lightly clap the mint leaves between your hands to release aromatic oils. Add the mint leaves and lime wedges to a sturdy glass or a cocktail shaker. Muddle gently 6–8 times — press just enough to bruise the mint and release lime juice without shredding the leaves (about 10–15 seconds). Add the pomegranate arils and give one gentle muddle to release a little color and juice from the arils; avoid over-muddling to prevent bitterness from pith or seeds.

Fill a highball glass about two-thirds with crushed ice or ice cubes (roughly 1 cup). Spoon or pour 3 tablespoons (about 45 ml) of the pomegranate-lime base over the muddled mint and lime in your shaker or glass.

If using, add the optional 1/2 teaspoon pomegranate molasses for extra depth. Gently stir or give a short shake (5 seconds) to combine base with the muddled mint and lime: you want the mint distributed but not pulverized.

Strain (if you muddled in a shaker) or transfer the mixture over the prepared ice in the serving glass. Top with 1/2 cup chilled club soda, pouring slowly to preserve carbonation. Stir once gently with a bar spoon to integrate.
