Method

Cocktail

  1. 1

    Prepare glass and mint

Place 8–10 fresh mint leaves in the bottom of a tall Collins or highball glass. Add the simple syrup (0.5 oz) and fresh lime juice (0.75 oz) over the mint.

  2. 2

    Muddle

Using a muddler or the back of a spoon, gently muddle the mint with the syrup and lime juice just enough to bruise the leaves and release essential oils. Avoid tearing the leaves to prevent bitterness.

  3. 3

    Add spirits and juice

Fill the glass about two-thirds with crushed ice or regular ice. Pour in Don Q Passionfruit Rum (2 oz) and pomegranate juice (2 oz).

  4. 4

    Mix

Stir gently 6–8 times with a bar spoon to combine the muddled mint, rum and juices and to chill the drink.

  5. 5

    Top and garnish

Top the cocktail with club soda (about 2 oz) to taste, then lightly slap a reserved mint sprig between your palms to release aroma and use it as garnish. Add a lime wheel or wedge on the rim and sprinkle pomegranate arils (about 1 tbsp) on top.

  6. 6

    Serve

Insert a straw (optional), give one gentle stir so the soda lifts some mint and arils, and serve immediately while cold.
