Prepare glass and mint
Place 8β10 fresh mint leaves in the bottom of a tall Collins or highball glass. Add the simple syrup (0.5 oz) and fresh lime juice (0.75 oz) over the mint.

Muddle
Using a muddler or the back of a spoon, gently muddle the mint with the syrup and lime juice just enough to bruise the leaves and release essential oils. Avoid tearing the leaves to prevent bitterness.

Add spirits and juice
Fill the glass about two-thirds with crushed ice or regular ice. Pour in Don Q Passionfruit Rum (2 oz) and pomegranate juice (2 oz).

Mix
Stir gently 6β8 times with a bar spoon to combine the muddled mint, rum and juices and to chill the drink.

Top and garnish
Top the cocktail with club soda (about 2 oz) to taste, then lightly slap a reserved mint sprig between your palms to release aroma and use it as garnish. Add a lime wheel or wedge on the rim and sprinkle pomegranate arils (about 1 tbsp) on top.

Serve
Insert a straw (optional), give one gentle stir so the soda lifts some mint and arils, and serve immediately while cold.
