Prepare syrup
Combine 0.5 cup water and 0.5 cup light brown sugar (or toasted palm sugar) in a small saucepan over medium heat. Stir until sugar dissolves and mixture comes to a gentle simmer, about 3–4 minutes. Remove from heat, stir in 1 tsp lime zest if using, and let cool to room temperature. Strain into a jar and refrigerate. Syrup will keep up to 2 weeks.

Chill a large wine glass or coupe by filling with ice and setting aside while you prepare the cocktail.

Discard the chilling ice and add fresh ice to the chilled glass (large cube or a handful of ice).

In a cocktail shaker (no need to add ice to the shaker) or mixing glass, combine 2 oz gin, 0.5 oz palm syrup, 0.75 oz fresh lime juice, and 0.25 oz green chartreuse.

Top gently with 2 oz dry sparkling wine (Cava or Prosecco) and a splash (about 0.5 oz) of club soda. Stir once gently to integrate without flattening the bubbles.
