Select & Chill

Purchase oysters the same day you plan to serve them; keep them cold on ice in the refrigerator or a cooler until ready. Discard any oysters with broken shells or that do not close when tapped.

Prepare serving bed

Spread the crushed ice or a layer of rock salt on a large serving platter or individual plates to create a stable, cold bed for the oysters. This prevents tipping and keeps oysters chilled while serving.

Shuck oysters

Hold an oyster cup-side down in a towel to protect your hand. Insert a short, sturdy oyster knife into the hinge and twist to pop it open. Slide the knife along the top shell to cut the muscle and remove the top shell. Run the knife under the oyster meat to free it from the bottom shell, leaving the oyster sitting flat in its half shell with its liquor retained. Discard top shells and place each half shell on the prepared bed of ice, arranging lemon wedges and parsley around the oysters.

Final chill

Once all oysters are shucked and plated on ice, keep the platter chilled and serve immediately. Oysters on the half shell are best served within 30–60 minutes of shucking.

Classic Mignonette

Combine red wine vinegar, finely minced shallot, coarsely ground black pepper, sugar (if using), and a pinch of sea salt in a small bowl. Stir until the sugar and salt dissolve. Taste and adjust acidity or shallot intensity; allow to sit at least 10 minutes to let flavors meld. Transfer to a small serving bowl and place next to the oysters. Guests can spoon a small amount onto each oyster.

Hot Sauce Condiment

Mix prepared horseradish with hot sauce in a tiny bowl. Adjust the ratio to preference for heat. Serve a small dollop or a tiny ramekin alongside oysters; guests can add to taste.

Cocktail Sauce

Whisk together ketchup, prepared horseradish, Worcestershire sauce, fresh lemon juice, optional hot sauce, and a pinch of coarse black pepper in a bowl until smooth. Taste and adjust horseradish or lemon for brightness. Place in a small serving bowl with a spoon.
