    Prepare service bed

    Fill a large serving platter or rimmed sheet with an even layer of crushed ice to stabilize oysters and keep them cold.

    Rinse oyster shells under cold water and scrub to remove any grit. Pat dry with a towel.

    Shuck oysters: hold oyster cup-side down in a towel, insert oyster knife at hinge, twist to pop, slide knife along top shell to cut adductor, discard top shell, loosen oyster from bottom shell but leave in its liquor. Arrange oysters on the ice, 24 per platter.

    Garnish platter with lemon wedges and sprinkle chopped parsley lightly over the ice for color.

Classic Mignonette

    Combine red wine vinegar, champagne vinegar, and minced shallot in a small bowl.

    Add black pepper and sea salt; stir to dissolve. Taste and adjust balance — it should be bright and sharp. Let sit 10 minutes at room temperature to mellow and for flavors to marry.

    Transfer to a small serving bowl and serve alongside raw oysters.

Spicy Cocktail Sauce

    In a small bowl, whisk together ketchup, prepared horseradish, hot sauce, Worcestershire sauce, and lemon juice until smooth.

    Taste and adjust heat or horseradish to preference. Chill until ready to serve.

Hot Buttered Oysters (Chargrilled)

    Preheat a grill or broiler to high (or a very hot cast-iron skillet if pan-searing). If using a grill, set up for direct heat.

    Make the compound butter: in a small bowl, combine softened butter, minced garlic, chopped parsley, grated Parmesan, lemon zest, smoked paprika and coarse salt. Mix until evenly incorporated.

    If using panko topping: toss panko with olive oil until lightly coated and warm in a small skillet for 1–2 minutes to toast slightly (watch carefully to avoid browning). Fold panko into the butter mixture or sprinkle on top of each oyster just before cooking, depending on desired texture.

    Place oysters (in their bottom shells) on the grill or a rimmed sheet under the broiler. Top each oyster with about 1/2 teaspoon of the compound butter (approx. 24 oysters ÷ 4 tbs butter = ~1/2 tsp each) and a small pinch of panko if using.

    Cook 3–6 minutes under broiler or over direct heat until butter is bubbling, edges of oyster curl slightly and panko is golden. Watch closely to avoid overcooking — oysters cook quickly.

    Remove from heat and let rest 30 seconds. Serve hot on a warmed platter or on the crushed-ice bed for contrast. Garnish with extra parsley and a lemon wedge.

    If not already toasted, heat a small skillet over medium and add panko with olive oil. Stir constantly until panko is light golden, about 1–2 minutes. Let cool slightly before using as a topping.
