Prepare Salad

Trim and halved lettuce

Remove any damaged outer leaves from the iceberg heads. Rinse each head under cold water and pat dry thoroughly. Cut each head in half through the stem to create two wedges (or into quarters for smaller portions). Keep the core intact so wedges hold together.

Slice red onion

Peel the red onion and slice very thinly into half-moons. Separate rings so they can be scattered over the wedges. If you prefer a milder flavor, soak the slices in cold water for 5 minutes, then drain and pat dry.

Arrange wedges

Place one or two iceberg wedges on each serving plate (depending on portion size). Fan a few red onion slices around the wedge to create visual contrast.

Make Balsamic Tomatoes

Halve the cherry tomatoes lengthwise and place them in a medium bowl.

In a small bowl, whisk together the balsamic vinegar, olive oil, sugar, salt, and black pepper until the sugar dissolves and the dressing is homogeneous.

Pour the balsamic mixture over the halved tomatoes and toss gently to coat. Let sit at room temperature for 10 minutes to macerate (this mellows acidity and concentrates flavor).

Make Blue Cheese Dressing

In a bowl, combine mayonnaise, sour cream, buttermilk, lemon juice, Worcestershire sauce, and minced garlic. Whisk until smooth.

Fold in 1/2 cup crumbled blue cheese, reserving a few tablespoons for garnish. Season to taste with 1/4 tsp salt and 1/4 tsp black pepper. If you prefer a thinner dressing, add more buttermilk one teaspoon at a time until desired consistency is reached.

Taste and adjust acidity or salt as needed. Chill the dressing briefly if you want it colder before serving, but it can be used immediately.

Assemble and Serve

Spoon a generous portion of the balsamic tomatoes over each iceberg wedge, allowing some tomatoes and dressing to cascade down the sides.

Drizzle 2 to 3 tablespoons of blue cheese dressing over each wedge (adjust to taste).

Scatter the remaining crumbled blue cheese over the top and sprinkle with fresh parsley if using. Finish with a light grind of black pepper.

Serve immediately so the lettuce stays crisp. Provide extra blue cheese dressing on the side.
