    Build and shake

    Fill a cocktail shaker halfway with ice. Pour in 2 oz coconut rum, 1 oz peach schnapps, 1.5 oz orange juice, 1.5 oz pineapple juice, 1 oz cranberry juice, 0.25 oz fresh lime juice and 0.25 oz simple syrup. Secure the lid and shake vigorously for 10–15 seconds until well chilled.

    Strain

    Fill a highball or Collins glass with fresh ice. Strain the shaken mixture into the glass over the ice.

    Create the sunset effect

    Slowly pour an additional 0.25–0.5 oz cranberry juice (if desired) down the side of the glass or over the back of a spoon so it sinks slightly and creates a layered 'sunset' gradient. Alternatively, float a splash of grenadine for a deeper red layer.

Garnish & Serve

    Garnish the glass with an orange wheel on the rim and a maraschino cherry dropped into the drink. Add a mint sprig if using for aroma.

    Serve immediately with a straw. Recommend served during happy hour chilled; yields one cocktail.
