Balsamic Marinated Tomatoes

Combine the halved cherry tomatoes, aged balsamic vinegar, olive oil, sugar, a pinch of sea salt, and minced garlic (if using) in a small bowl. Stir gently to coat.

Let the tomatoes marinate at room temperature for at least 15–30 minutes, stirring once or twice. For deeper flavor, refrigerate up to 2 hours and bring back to room temperature before using.
Basil Pesto Oil

In a blender or food processor, combine the packed basil leaves, toasted pine nuts (or walnuts), grated Parmesan, salt, and pepper. Pulse to chop the solids finely.

Transfer the pesto oil to a small squeeze bottle or small bowl for easy finishing.
Assembling the Caprese Oysters

Shuck oysters and place each oyster on the half shell on a bed of crushed ice or a serving platter stabilized with rock salt to keep level. Work over a towel and wear a glove or use an oyster knife as needed for safety.

Place roughly 1/4 teaspoon of creme fraiche on each oyster (about 3 tablespoons total across 12 oysters). Use a small spoon to gently dollop it so the oyster liquor remains.

Top each creme fraiche dollop with about 1/2 teaspoon of the balsamic marinated tomatoes (including a little of the marinade for flavor). Ensure each oyster gets at least one tomato half.

Drizzle each oyster lightly with about 1/4 teaspoon of the basil pesto oil (use a squeeze bottle or a small spoon) so the basil flavor is present but does not overwhelm the oyster.

Garnish each oyster with a micro basil leaf and a small crack of fresh black pepper.

Serve immediately on crushed ice with lemon wedges on the side. Recommend consuming within 30 minutes of assembly for best texture and flavor.
