Shrub Base (Tart Fruit Syrup)
Make the shrub
Place 2 cups mixed berries and 1 cup granulated sugar in a medium bowl. Mash gently with a fork or muddler until berries release juices but still have some texture (about 1–2 minutes). Cover and refrigerate for 1 hour to macerate.
After maceration, transfer the fruit-sugar mixture to a fine-mesh sieve set over a bowl. Press solids firmly to extract syrup. Discard (or reserve) solids. Measure the strained syrup; if you have about 1 cup syrup proceed, otherwise adjust vinegar proportionally.
Stir in 1 cup apple cider vinegar, 1 tablespoon lemon zest, and 2 tablespoons lemon juice into the strained berry syrup until combined. Taste: the shrub should be bright, tart, and slightly sweet. Adjust sugar or vinegar by 1 tablespoon increments if needed.
Transfer shrub to a sterilized jar, seal, and refrigerate at least 4 hours or overnight to allow flavors to meld. Keeps up to 2 weeks chilled.
Sherbet Ice (Frozen, Creamy Element)
Prepare the sherbet base
In a medium bowl whisk together 1 cup whole milk, 1 cup heavy cream, 1 tablespoon sweetened condensed milk, 1 teaspoon vanilla extract, and 1 teaspoon finely grated orange zest until evenly combined. Taste for sweetness — condensed milk adds a touch of sweetness and body; add up to 1 more teaspoon if you prefer sweeter.
If you have an ice cream maker: chill the mixture for 30 minutes, then churn according to manufacturer instructions until soft-set (about 20–25 minutes). Transfer to a shallow container and freeze 1–2 hours until scoopable but still slightly creamy.
When sherbet is firm but scoopable, remove from freezer 10 minutes before assembling to soften slightly.
Bubble Pearls (Soda Bubbles with Texture)

Chill 2 cups sparkling water and 1 cup club soda well. If using tapioca pearls for chew: cook small tapioca pearls according to package instructions (usually 5–10 minutes simmer), then rinse under cold water, toss in a teaspoon of sugar or a splash of shrub for flavor, and chill. Measure about 1/2 cup cooked pearls.
Combine chilled sparkling water and club soda in a pitcher and keep cold. Do not stir vigorously once combined — you want the effervescence to remain.
Assembly & Garnish
Assemble the Sherb Bubble
Fill each serving glass halfway with crushed ice (about 1/2 cup ice per glass if making 4 servings). Add 2 tablespoons of shrub syrup into each glass (adjust to taste for sweetness/tartness). Spoon one generous scoop (about 1/3 cup) of the sherbet ice over the shrub and ice.
Gently pour chilled sparkling water and club soda mixture over the sherbet and shrub until glass is nearly full, leaving room for the sherbet to float (about 3/4 cup per glass). The sherbet will foam and create a frothy, bubbly crown — let it settle for 20–30 seconds.
If using cooked tapioca pearls, add about 1–2 tablespoons to each glass so they sit near the bottom and provide chewy bursts amid the bubbles.
Leftover shrub keeps refrigerated up to 2 weeks. Leftover sherbet keeps frozen up to 1 week; refreeze in an airtight container.
