Method
Prep potatoes
Peel and cut
Peel the potatoes and cut them into chips about 1.5–2 cm (1/2–3/4 inch) thick. Aim for uniform size so they cook evenly.
Rinse and soak
Place the cut potatoes in a large bowl and cover with the cold water. Rinse and change the water once or twice until it runs clearer, then leave to soak for 30 minutes to remove excess surface starch (this helps achieve fluffy interiors and crisp edges).
Parboil & rough up
Parboil
Drain the soaked potatoes and transfer them to a large pot. Cover with fresh cold water and add 1 tablespoon sea salt. Bring to a gentle boil, then reduce to a simmer and parboil for 6–8 minutes, or until the exterior is just tender but the center is still firm (a knife should meet slight resistance). Do not fully cook.
First fry (blanch) - low temperature
Heat fat
Place a deep, heavy-bottomed pan or deep-fat fryer on medium heat. Add the beef dripping (150 g). If your dripping has a low smoke point, stir in 1 tablespoon vegetable oil. Heat until the fat reaches 130–140°C (265–285°F) or is shimmering but not smoking.
Blanch chips
Working in batches to avoid crowding, add chips to the hot fat and cook for 6–8 minutes until they are softened and pale golden but not browned. Maintain the temperature; adjust the heat so the fat stays around 130–140°C. Use a slotted spoon to transfer chips to a wire rack set over a sheet tray to drain and cool.
Cool
Let the par-fried chips cool completely (30–45 minutes). You can refrigerate briefly to speed this step if desired.
Final fry - high temperature
Reheat fat
Increase the heat under the fat to 190–195°C (375–385°F). If using a thermometer, confirm the higher frying temperature before adding chips.
Crisp chips
Working again in batches, fry the cooled chips for 3–5 minutes until deeply golden-brown and crisp all over. Stir gently to ensure even browning. Remove with a slotted spoon and transfer back to the wire rack; drain briefly.
Season
While still hot, sprinkle the chips evenly with 1 teaspoon sea salt and 1/2 teaspoon freshly ground black pepper. Toss gently to coat.
Finish & serve
Transfer chips to a warmed serving bowl or platter. If using, sprinkle chopped parsley and grated Parmesan over the top for a fresh, savory finish. Serve immediately while hot and crispy.
Leftover dripping can be strained, cooled, and refrigerated for future use.
