Makrut Leaf Infusion (optional, 10–15 minutes)

Infuse lime aroma into lime juice

Tear 1 makrut lime leaf into 2–3 pieces and muddle gently in a small bowl with the measured fresh lime juice (0.75 oz) for about 10–15 seconds to release the aromatic oils. Let sit for 5–10 minutes while preparing the rest of the cocktail. If you prefer a stronger, quicker aroma, bruise the leaf with the back of a spoon directly in the shaker.

Build & Shake

Fill a cocktail shaker halfway with ice.

Add the overproof pineapple rum (2 oz), the infused lime juice (0.75 oz) or straight fresh lime juice if you skipped infusion, and simple syrup (0.5 oz) into the shaker.

Optional: add 2 dashes of bitters if using for aromatic complexity.

Shake vigorously for 10–12 seconds until chilled and slightly diluted.

Serve

Fill a mule mug or highball glass with crushed ice (about 1 cup).

Strain the shaken mixture over the crushed ice.

Top with chilled ginger beer (about 4 oz). Stir gently once or twice to combine.

Garnish with the torn makrut lime leaf (slap it between your palms first to release oils) and a lime wheel or pineapple wedge. If you prepared an extra makrut leaf, float it on top for aroma.

Serve immediately with a straw. Recommend reminding guests this is an overproof rum cocktail—sip responsibly.
