Method
Base Sherbet
Warm and dissolve
Combine whole milk, heavy cream, granulated sugar, and corn syrup in a small saucepan over low heat. Stir constantly just until sugar dissolves and mixture is warm (do not boil), about 3–4 minutes. Remove from heat and stir in vanilla extract and a pinch of fine sea salt. Cool slightly, then refrigerate until cold, at least 45 minutes.
Once chilled, pour the dairy mixture into a blender or food processor.
Fruit & Flavor
Prepare banana base
Peel and roughly chop the ripe bananas. Add bananas, fresh lemon juice, orange zest, and freeze-dried raspberry powder (or raspberry puree) to the blender with the chilled dairy. If using optional natural banana/fruit flavor, add it now. Blend on high until completely smooth, about 45–60 seconds, scraping down the sides once.
Taste and adjust sweetness or acid: add up to 1 tbs more sugar (or 1 tsp more lemon) if needed. Chill the blended mixture in the refrigerator for another 20–30 minutes so it is thoroughly cold for churning.
Churn & Freeze
Pour the cold banana-dairy mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, about 20–25 minutes.
Transfer churned sherbet to an airtight container, smooth the top, and press a piece of plastic wrap directly onto the surface to prevent ice crystals. Freeze for at least 2 hours to firm up to scoopable texture.
Ape Bubbles — Fizzy Top & Texture
Make bubble syrup (optional)
In a small saucepan, combine 2 tablespoons water and 2 tablespoons sugar. Warm over low heat, stirring until the sugar dissolves. Remove from heat and stir in 1 teaspoon citric acid until dissolved. Let the syrup cool to room temperature.
Prepare fizzy topping
When ready to serve, gently fold chilled soda water into the bubble syrup (if using), keeping as much carbonation as possible. Alternatively, skip the syrup and simply use chilled soda water with a small dusting of citric acid to create tangy fizz.
Spoon scoops of the banana-raspberry sherbet into bowls or cups. Top each serving with 1–2 tablespoons of the fizzy bubble mixture spooned carefully over the top so it creates effervescence. If using edible popping boba, scatter 1–2 teaspoons per serving on top for additional bursts of flavor and texture.
Serve immediately after adding the fizzy topping so the bubbles remain lively. If left, the fizz will dissipate and popping boba will soften.
