Soak the beans
Rinse the dried beans thoroughly and pick out any debris. Place beans in a large bowl and cover with 6 cups of water. Soak at least 6–8 hours or overnight. For a quick soak: bring beans and water to a boil for 2 minutes, then remove from heat and let sit, covered, for 1 hour.

Cook the beans
Drain and rinse soaked beans. Place beans in a large pot and add 6 cups fresh water. Bring to a gentle simmer and cook until beans are just tender but not falling apart, about 45–60 minutes depending on age of beans. Add 1.5 tbs kosher salt during the last 10–15 minutes of cooking. Drain beans, reserving about 1/2–1 cup of the cooking liquid.

While the beans cook (or in a separate skillet), prepare the flavor base. If using bacon, cook diced bacon in a large heavy-bottomed skillet or Dutch oven over medium heat until fat renders and bacon is crisp, about 6–8 minutes. Remove bacon pieces with a slotted spoon and set aside, leaving bacon fat in the pan. If not using bacon, heat 1 tbs olive oil in the pan.

Lower heat to medium-low. Add the ketchup, maple syrup (or brown sugar), apple cider vinegar, molasses, Dijon mustard, Worcestershire sauce, smoked paprika, black pepper, and chopped chipotle (if using) to the pan. Stir to combine and gently simmer the sauce for 3–5 minutes to meld flavors and slightly thicken.

Taste the sauce and adjust sweetness, acidity, or heat as needed — add a touch more vinegar for brightness, more maple or sugar for sweetness, or a pinch more smoked paprika for smokiness.

Add the drained beans and reserved cooking liquid (or up to 1/2 cup stock) to the pan with the sauce. Stir to coat the beans thoroughly. If the mixture seems too thick, add small amounts of reserved bean liquid or stock until you reach a saucy but not soupy consistency.

Reduce heat to low, fold the reserved cooked bacon into the beans (if using), cover loosely, and simmer gently for 15–20 minutes so flavors meld and the sauce thickens further. Stir occasionally to prevent sticking and adjust seasoning with salt and pepper to taste.

If you prefer a creamier texture, mash about 1/2 cup of the beans against the side of the pot and stir to incorporate; this will thicken the sauce naturally.

Remove from heat and stir in chopped parsley if desired. Let the beans rest 5–10 minutes before serving to allow the sauce to settle.
