    Measure 0.5 cups coarsely ground coffee. Heat 64 oz (8 cups) filtered water to 200°F (just off a rolling boil). If using a drip machine, pour the water into the reservoir; if using a manual brewer (French press, pour-over), heat separately.

    For automatic drip: add the grounds to the filter and start the brew cycle to make 64 oz of coffee. For pour-over: divide grounds into two 8–10 cup drippers and brew proportionally using the 1:16 coffee-to-water ratio (0.5 cup grounds to 64 oz water), pouring slowly and evenly until all water has passed. For French press: divide into two presses, add grounds, pour half the hot water, bloom 30 seconds, pour remaining water, steep 4 minutes, then plunge.

    Keep hot for bottomless service

    Transfer brewed coffee to a preheated thermal carafe or two carafes immediately to preserve temperature and flavor. Keep carafes on a low-warm plate or insulated dispenser; avoid direct heat that will scorch the coffee. Refill carafes from reserve if needed so guests can continually pour.

    If offering flavored options, divide sugar, brown sugar, cinnamon, and vanilla into small jars or a syrup dispenser for guests. For a simple cinnamon-sugar brew: stir 1 tsp cinnamon and 1–2 tbs brown sugar into 1 cup of hot brewed coffee until dissolved and add to a labeled pitcher so guests can top their cups. For vanilla: make a quick vanilla syrup by dissolving 1 tsp vanilla and 2 tbs sugar in 2 tbs hot water; keep in a small bottle.

    Warm milk or oat milk gently on the stovetop or in a milk steamer to 140–150°F if guests prefer steamed milk. Pour the whole milk, half-and-half, and oat milk into small pitchers and label them. Keep chilled options on ice or refrigerated until service; warmed options should be kept in a thermos or on a low-warm setting and refilled as needed.
