Prepare the Lobster Mixture

In a mixing bowl, combine the cooked lobster meat, mayonnaise, chopped celery, chopped onion, chopped shallots, Old Bay seasoning, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare the Fries

Toss the cut russet potatoes in a bowl with olive oil, Old Bay seasoning, and salt until evenly coated.

Bake the Fries

Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, turning halfway through, until golden and crispy.

Once the lobster filling has chilled and the fries are cooked, take the hot dog buns and lightly toast them if desired.
