Prepare the Herb’d Chive Mustard

In a bowl, combine Dijon mustard, chopped chives, honey, and lemon juice. Mix well and set aside.

Prepare the Salmon Belly

Preheat the broiler in your oven. Place the wild salmon belly on a broiler pan lined with foil. Season with salt and pepper.

Broil the Salmon

Broil the salmon belly for about 6-8 minutes, or until the skin is crispy and the salmon is cooked through. Keep an eye on it to prevent burning.

Assembly

Plate the Dish

On a serving plate, place the broiled salmon belly. Layer with smoked salmon and spoon the spicy sauerkraut over the top. Drizzle the herb’d chive mustard and garnish with dill pickles on the side.
