Method
Prep
- 1
Wash the okra and pat dry thoroughly. Trim the stem ends without cutting into the pod (about 1/4 inch). Slice each pod lengthwise in half. Drying okra well reduces sliminess during cooking.

Sautéing Vegetables
- 3
Heat oil
Place a large skillet or sauté pan over medium-high heat. Add 2 tablespoons olive oil and allow it to shimmer but not smoke (about 1 minute).
- 4
- 5
Add garlic
Add the minced garlic and cook for 30–45 seconds until fragrant, stirring to avoid burning.
Cooking Okra
- 6
Add okra and initial seasonings
Add the halved okra to the pan in a single layer if possible. Sprinkle with 1 teaspoon kosher salt, 1/2 teaspoon black pepper, 1/2 teaspoon smoked paprika, 1/4 teaspoon ground cumin (if using), and 1/4 teaspoon red pepper flakes (if using). Toss to coat with oil and spices.
- 7
Brown the okra
Cook the okra, stirring every 1–2 minutes, until it begins to brown lightly on the cut sides, about 6–8 minutes. Avoid stirring constantly so the okra can sear and reduce sliminess.
- 8
Add tomato and deglaze
Stir in the diced tomato and 1/4 cup water or broth. Use a wooden spoon to scrape up any browned bits from the pan. Reduce heat to medium-low.
- 9
Simmer briefly
Cover the pan loosely and simmer for 4–6 minutes until the okra is tender but not mushy. Taste and adjust seasoning, adding lemon juice (1 tablespoon) to brighten flavors.
Finish and Serve
- 10
Remove the pan from heat. Stir in chopped cilantro or parsley. Transfer to a serving bowl and garnish with an extra squeeze of lemon if desired. Serve hot as a side with rice, cornbread, or grilled meats.
- 11
Leftovers: cool to room temperature, then refrigerate in an airtight container for up to 3 days. Reheat gently on the stovetop to avoid overcooking.
