Method

Potatoes & Cooking Liquid

  1. 1

    Select and wash

Choose new/baby potatoes of roughly similar size (1–2.5 cm / 0.5–1 in). Scrub them under cold running water to remove any dirt. Leave the skins on for flavor and texture. If some potatoes are much larger, halve them so sizes are uniform.

  2. 2

Place in pot and add water

Put the potatoes in a large saucepan or pot in a single layer. Pour in enough cold water to cover the potatoes by about 2 cm (approximately 1 liter for 1 kg potatoes). Adding cold water ensures even cooking.

  3. 3

Salt and bring to a simmer

Add the coarse salt to the water. Place the pot over high heat and bring to a gentle boil. Once boiling, reduce heat to maintain a steady simmer (small bubbling) so the potatoes cook evenly without breaking apart.

  4. 4

    Cook until tender

Simmer the potatoes, uncovered, for 10–20 minutes depending on size. Test doneness by piercing the largest potato with a paring knife or skewer — it should enter with little resistance. Smaller potatoes will be done closer to 10–12 minutes; 1–2 cm larger ones may need 15–20 minutes.

  5. 5

    Drain and steam-dry

When tender, drain the potatoes in a colander. Return them to the hot pot off the heat, cover with the pot lid, and let them sit for 1–2 minutes to steam-dry. This removes excess surface moisture so the finishing flavors adhere better.

Finishing & Serving

  1. 6

    Add butter and oil

With the pot still warm, add the unsalted butter and olive oil to the potatoes. Gently toss or shake the pot to coat the potatoes evenly so the butter melts and glazes them. If you prefer, you can dot butter over the hot potatoes and stir gently with a spoon.

  2. 7

    Season and toss with herbs

Sprinkle the chopped parsley, freshly ground black pepper, sea salt or flaky salt, and optional lemon zest over the potatoes. Toss gently with a spatula or by shaking the pot until the herbs and seasonings are evenly distributed.

  3. 8

    Taste and adjust

Taste a potato for seasoning. Add a little more salt, pepper, or a squeeze of lemon juice if desired. If you want a richer finish, add another 1/2 tablespoon of butter and toss again.

  4. 9

    Serve

Transfer the glazed new potatoes to a serving bowl or platter. Serve hot as a side dish to grilled meats, fish, roasted vegetables, or as part of a salad. Leftovers can be cooled and used in potato salads or gently reheated in a skillet.
