Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch for crispier fries.

Dry the Potatoes

Drain the soaked potatoes and spread them out on a clean kitchen towel. Pat them dry thoroughly to remove excess moisture.

Heat the Oil

In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Carefully add a batch of the dried potato strips to the hot oil. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Fries

While the fries are still hot, sprinkle with salt, paprika, and black pepper. Toss to coat evenly.
