Method
Prepare Watermelon Base
Blend watermelon
Place the cubed watermelon in a blender with the fresh lime juice, honey (or agave), cold water, and sliced ginger. Blend on high until completely smooth, about 30–45 seconds.
Taste the puree and adjust sweetness or acidity: add more honey for sweetness or another 1/2 tablespoon lime juice for brightness. If you want a thinner consistency, add up to 1/2 cup more cold water and pulse briefly.
Strain the watermelon puree through a fine mesh sieve into a large pitcher to remove pulp and any fibrous bits from the ginger. Use a spatula to press the liquid through. Discard solids.
Infuse & Chill
Tear the mint leaves lightly to release aroma and add them to the pitcher with the strained watermelon juice. Stir to combine.
Cover the pitcher and refrigerate for at least 30 minutes (up to 2 hours) to let the mint and ginger infuse the juice. This makes the drink more aromatic and lively.
Assemble & Serve
When ready to serve, fill four tall glasses with about 1/2 cup ice each (adjust for glass size). If making alcoholic, add 1 tablespoon (15 ml) vodka or white rum to each glass now.
