Gather and prep
Crack eggs into a medium bowl, add milk, salt and black pepper. Whisk vigorously until uniform and slightly frothy. Dice ham and peppers, halve cherry tomatoes, slice mushrooms, chop spinach and chives. Shred cheeses if not pre-shredded. If bacon and sausage are not cooked, cook them now and crumble/chop.
Cook fillings
Sauté vegetables and warm proteins
Heat a 10-inch nonstick skillet over medium heat. Add 1 teaspoon butter or a thin film of oil. Add diced onion and bell pepper and sauté 2 minutes until softened. Add mushrooms and cook 1–2 minutes until they release moisture. Push vegetables to one side of the pan, add diced ham, crumbled sausage and chopped bacon to the other side just to warm for 1 minute. Stir everything together, then add chopped spinach and cook 30–45 seconds until wilted. Transfer the mixture to a bowl and set aside. Keep skillet on medium-low heat.
Cook omelet
Melt butter and add eggs
Increase heat to medium. Add the remaining butter (about 1 tablespoon) to the skillet and swirl to coat. Pour the whisked eggs into the pan and let sit undisturbed for 10–15 seconds until edges begin to set.
Add fillings
Evenly distribute the warmed filling mixture across one half of the omelet. Sprinkle shredded cheddar and Monterey Jack (if using) over the fillings.
Fold and finish
Run the spatula under the other half of the omelet and fold it over the fillings to form a half-moon. Reduce heat to low, cover the pan with a lid for 30–60 seconds to melt cheese through and finish cooking the center. For a firmer omelet, cook an additional 30 seconds.
