Granola
Preheat and prepare
Preheat oven to 325°F (160°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
Mix dry ingredients
In a large bowl combine 2 cups rolled oats, 1/2 cup chopped almonds, 1/4 cup chopped walnuts, 2 tablespoons sunflower seeds, 1 tablespoon flaxseed meal, 1/4 cup shredded coconut, 1/2 teaspoon ground cinnamon and 1/4 teaspoon fine sea salt. Stir to distribute evenly.
Combine wet ingredients
In a small bowl whisk together 3 tablespoons maple syrup, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract until combined.
Coat and spread
Pour the wet mixture over the dry ingredients and stir thoroughly until everything is lightly coated and clumps begin to form. Spread the granola in an even layer on the prepared baking sheet.
Bake and stir
Bake for 18–22 minutes, stirring gently once halfway through (around 10–12 minutes) to ensure even browning. Watch closely the last 5 minutes to prevent burning; granola will be golden and set when done.
Cool and add mix-ins
Remove the granola from the oven and let it cool completely on the sheet (it will crisp as it cools). Once cool, stir in optional 2 tablespoons dark chocolate chips and 1/4 cup chopped dried apricots if using.
Fruit & Assembly
Prepare fruit
While the granola bakes or cools, wash and prepare the fruit: slice 1 banana, hull and slice any large strawberries, measure 1 cup mixed berries, peel and slice 1 kiwi, and remove 1/4 cup pomegranate arils. Pat fruit dry with paper towel to remove excess moisture.
Assemble bowls
Divide the cooled granola evenly among the bowls (about 1/2 cup granola per bowl). Arrange banana slices, mixed berries, kiwi slices, and pomegranate arils on top of the granola in an attractive pattern.
Finish and garnish
Drizzle each bowl with a little honey if desired (about 1/4 tablespoon per bowl), sprinkle 1 teaspoon chia seeds across the bowls (divided), and add a small handful of any remaining nuts or coconut for extra texture. Serve immediately with 1/2 cup milk or plant milk on the side if you like your granola with milk.
