Method
Cook the Oats
Bring to a simmer
In a small saucepan, combine 1 cup rolled oats, 1.75 cups water, 0.5 cup milk and a pinch of salt. Place over medium heat and bring to a gentle simmer, stirring once or twice to prevent sticking.
Cook until creamy
Reduce heat to low and cook, stirring occasionally, for 6–8 minutes until the oats are thick and creamy and most liquid is absorbed. If mixture thickens too much, stir in up to 2 tablespoons water or milk to reach desired consistency.
Boost with Protein & Mix-ins
Remove the saucepan from heat. Stir in 0.5 cup Greek yogurt, 1 scoop vanilla protein powder, 1 tablespoon chia seeds and 1 tablespoon almond butter until well combined. Taste and add 1/2 teaspoon ground cinnamon and 1 tablespoon ground flaxseed (if using).
If you prefer a smoother texture, let the oats sit for 1–2 minutes off the heat then whisk briskly to incorporate the protein powder fully and eliminate clumps.
Assemble the Bowl
Spoon the warm oatmeal into a bowl.
Top with sliced banana (1 whole), 1/2 cup fresh berries, 2 tablespoons chopped nuts and 1 tablespoon shredded coconut (if using).
Garnish with an extra pinch of cinnamon if desired. Serve warm.
