Prepare equipment and ingredients

Bring eggs to room temperature if possible (10–15 minutes). Split English muffins and set aside. Measure out butter, oil, Mike's Hot Honey, salt and pepper. Heat a large nonstick skillet or griddle over medium heat.

Cook sausage patties

Add 1 tsp neutral oil to the preheated skillet. Place the two Jones Dairy Farm sausage patties in the skillet and cook 3–4 minutes per side, or until an internal temperature of 160°F (71°C) is reached and outsides are nicely browned. Transfer patties to a warm plate and keep pan heat at medium-low.

Toast English muffins

Melt 1/2 tablespoon butter on the griddle or in a separate skillet over medium heat. Place English muffin halves cut-side down and toast until golden and crisp, about 2–3 minutes. Remove and keep warm.

Cook eggs over-easy

Add the remaining 1/2 tablespoon butter to the skillet and let it foam. Crack an egg into a small bowl and gently slide into the skillet; repeat for second egg, leaving space between. Season each egg with a pinch of salt and a pinch of pepper. Cook until the whites are set around the edges, about 2–3 minutes. Carefully flip each egg and cook 15–30 seconds for a runny yolk (longer if you prefer slightly firmer yolks). Remove eggs to a plate.

Assemble sandwiches

Place the bottom half of each toasted English muffin on plates. Top each with one cooked sausage patty. Lay a slice of smoked Wisconsin Gouda over each hot patty to allow it to melt slightly. Place an over-easy egg on top of the cheese. Sprinkle the arugula evenly over the eggs (about 1/2 cup per sandwich). Drizzle 1 tablespoon Mike's Hot Honey over each sandwich top layer. Close sandwiches with the muffin tops.

Final seasoning & rest

Sprinkle each assembled sandwich lightly with the remaining pinch of salt and a little freshly ground black pepper. Let rest 1 minute so cheese fully softens and honey settles, then serve immediately with the lemon-dressed mixed greens.

Side Salad (lemon-dressed organic mixed greens)

Whisk together 1 tablespoon lemon juice, 2 teaspoons olive oil, 1/2 teaspoon honey (if using), 1/8 teaspoon salt and a pinch (1/16 tsp) of black pepper in a small bowl until emulsified.

Place 2 cups organic mixed greens in a bowl. Drizzle the lemon dressing over the greens and gently toss to coat evenly. Divide greens onto the plate alongside each sandwich portion.

Optional: reserve a small extra drizzle of Mike's Hot Honey to serve on the side for guests who want more sweet-heat.
