Prepare and Bake Bacon

Preheat and prep

Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil for easy cleanup and place a wire rack on top of the sheet. The rack allows the bacon to cook evenly and the glaze to set without the strips sitting in rendered fat.

Arrange bacon

Lay the 12 thick-cut bacon slices in a single layer on the wire rack without overlapping. Trim to fit if needed; leave a little space between slices so air and glaze circulate.

Make Sweet Glaze

In a small saucepan or microwave-safe bowl combine 3 tbs brown sugar, 3 tbs maple syrup, and 2 tbs honey. Warm gently over low heat (or microwave in 20-second bursts), stirring until the sugar dissolves and the mixture is smooth and slightly thickened, about 2–3 minutes. Remove from heat and let cool 1 minute.

Whisk in 1 tsp Dijon mustard until fully incorporated. This adds a subtle tang that cuts the sweetness.

Apply Glaze and Toppings

Brush a generous layer of the warm glaze over each bacon slice using a pastry brush, coating both sides if practical. Reserve about 1–2 tbs of glaze for a final coat later.

Mix 1 tsp cracked black pepper, 1 tsp smoked paprika, 0.25 tsp cayenne, and the optional 0.25 cup finely chopped pecans in a small bowl. Sprinkle this mixture evenly over the glazed bacon so the nuts and spices adhere to the surface. Press lightly with the back of a spoon or your fingertips so toppings stick.

Bake to Finish

Place the baking sheet on the middle rack of the preheated oven and bake for 15 minutes. After 12–15 minutes, check for desired doneness: bacon should be caramelized at the edges and mostly crisp but still slightly chewy in thick-cut centers (timing depends on thickness and oven).

If you want a deeper caramelization, brush the reserved glaze over the bacon and return to the oven for 2–4 more minutes, watching carefully so it doesn’t burn.

Finish and Serve

Remove the tray from the oven and let the bacon rest on the rack for 2 minutes. Using tongs, transfer slices to a cutting board or serving platter lined with paper towel to absorb excess fat if desired.

Lightly sprinkle flaky sea salt (0.5 tsp total) and the additional 0.25 tsp freshly ground black pepper over the hot bacon. Scatter the optional 1 tbs chopped chives or parsley and a few extra chopped pecans for contrast.
