Prepare bread

Spread 1/2 tbs unsalted butter on one side of each sourdough slice. Heat a nonstick skillet over medium heat.

Toast bread

Place bread butter-side-down in the hot skillet. Toast until golden and crisp, about 2–3 minutes. Reduce heat to low and keep toasted slices warm in a low oven (90–100°C / 200°F) or on a covered plate.

Mix spread

In a small bowl, combine mayonnaise and Dijon mustard. Spread the mixture on the untoasted side of one warmed bread slice and spread softened cream cheese on the other slice.

Whisk eggs

Crack the eggs into a bowl, add the milk, 1/8 tsp kosher salt, and 1/8 tsp black pepper. Whisk until blended and slightly frothy.

Cook soft scramble

Wipe the skillet used for toasting, add remaining 1/2 tbs butter, and heat over low–medium. Pour in the egg mixture and let it sit 10–15 seconds. Using a silicone spatula, gently push eggs from edges to center, creating large curds. When eggs are about 70% set (soft and creamy), sprinkle shredded cheddar and snipped chives over the eggs, fold gently to finish cooking for 10–20 seconds. Remove from heat immediately to avoid overcooking.

While eggs cook, thinly slice the scallion and tomato (if using). Lightly wilt spinach by placing leaves in the warm skillet for 10–15 seconds or microwave for 8–10 seconds. Season spinach with a small pinch of salt and pepper.

Warm the ham or prosciutto in the skillet for about 15–20 seconds per side until just warmed and slightly crisp at the edges. This concentrates flavor and removes excess moisture.

Layer sandwich

Place the slice with cream cheese face-up. Layer warmed ham/prosciutto, wilted spinach, soft scrambled eggs with cheese, scallion slices, and tomato slices (if using). Sprinkle remaining 1/8 tsp kosher salt, remaining 1/8 tsp black pepper, and red pepper flakes if desired.

Top with the mayo-Dijon spread slice, buttered side out. Gently press the sandwich together. Return sandwich to the skillet over low heat and cook 30–45 seconds per side to meld flavors and crisp the bread—use a spatula to press lightly.

Remove from skillet, cut in half on a diagonal if desired, and garnish with extra chives. Serve immediately.
