Prepare Chorizo & Vegetables

Cook chorizo

Heat a 10-inch nonstick or well-seasoned cast-iron skillet over medium. Add 1 tsp neutral oil to the pan. Add the chorizo (removed from casings) and break up with a spatula. Cook, stirring occasionally, until browned and cooked through, about 6–8 minutes. Use a slotted spoon to transfer the cooked chorizo to a bowl, leaving rendered fat in the skillet.

If the pan is very greasy, spoon off all but 1 tablespoon of fat. Return skillet to medium heat and add the chopped onion and red bell pepper. Sauté until softened, about 4 minutes.

Add the diced jalapeño and minced garlic and cook until fragrant, about 30–45 seconds. Stir in the chopped cilantro and lime juice, then return the cooked chorizo to the skillet and mix to combine. Spread mixture evenly and transfer to a bowl to cool slightly while you prepare the eggs.

Make Egg Mixture

In a medium bowl, crack the 6 large eggs. Add 3 tablespoons whole milk, 1 tsp salt, and 1/2 tsp black pepper. Whisk vigorously until the mixture is uniform and slightly frothy, about 20–30 seconds. This aeration helps produce a tender omelet.

Cook Omelet

Wipe the skillet clean with paper towel if needed, then return to medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan.

Pour the beaten eggs into the skillet and let sit undisturbed for 10–15 seconds until edges set. Using a spatula, gently push the set edges toward the center while tilting the pan so uncooked egg runs to the edges. Continue until the eggs are mostly set but still slightly glossy on top, about 60–90 seconds.

Evenly distribute the chorizo-vegetable mixture over one half of the egg surface. Sprinkle 1 cup grated monterey jack (or crumbled queso fresco) over the chorizo.

Using the spatula, fold the empty half of the omelet over the filled half. Press gently and let cook 30–45 seconds more to melt the cheese and finish cooking through. If needed, lower heat to avoid browning too much.

Slide the omelet onto a warm plate. If desired, top with sliced avocado and a few drops of hot sauce or a spoonful of salsa.

Garnish with additional chopped cilantro if desired. Serve immediately with toast, warm tortillas, or a side salad.
