Cook the bacon
Heat a large nonstick or cast-iron skillet over medium heat. Once hot, add the bacon strips in a single layer without overcrowding. Cook, flipping occasionally, until crisp and golden at the edges, about 8–10 minutes depending on thickness. Transfer cooked bacon to a plate lined with paper towels to drain and keep warm. Reserve 1–2 tablespoons of bacon fat in the skillet; discard excess if there's more than 2 tbs.
Toast bread (optional)
While bacon cooks or after, lightly toast the bread or English muffins until golden. Butter if desired.
Fry the eggs (sunny-side or over-easy)
Wipe the skillet lightly if there's excess grease, leaving approximately 1 tsp bacon fat. Add 1 tsp neutral oil and 1 tbs unsalted butter to the skillet and melt over medium-low heat. Crack eggs into a small bowl one at a time and gently slide into the skillet, spacing them so they don't touch. Sprinkle each egg with a light pinch of salt and a grind of black pepper. For sunny-side up: cook undisturbed until whites are set but yolks still runny, about 2.5–3.5 minutes. For over-easy: once whites are mostly set, carefully flip each egg with a spatula and cook 20–30 seconds more to keep yolk runny. For firmer yolks, cook longer accordingly.
To serve
Serve immediately while hot. Estimated plating per serving: 2 eggs and 3 bacon slices with 1–2 slices of toast.
