Agnolotti Preparation and Sauce Directions
Make the Pasta Dough
In a mixing bowl, combine flour and salt. Make a well in the center, add the egg, and mix until a dough forms. Knead for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.
Prepare the Filling
In a bowl, mix blue crab meat, ricotta cheese, black pepper, and salt until well combined.
Roll Out the Dough
Divide the rested dough into quarters. Roll each piece into a thin sheet using a pasta machine or rolling pin.
Form the Agnolotti
Place small spoonfuls of the filling on one sheet of dough, about 1 inch apart. Moisten the edges with water, fold the dough over, and press to seal. Cut between the fillings to form individual agnolotti.
Cook the Agnolotti
Bring a large pot of salted water to a boil. Add agnolotti and cook for about 3-4 minutes or until they float to the surface. Drain and add to the sauce.
Serve
Plate the agnolotti, spoon the lobster and sweet corn sauce over them, and sprinkle with breadcrumbs and fresh basil.
