    Clean the Shellfish

    Rinse the clams or mussels under cold water to remove any sand or grit. Discard any that are open and do not close when tapped.

    Chop Ingredients

    Mince the garlic and finely chop the shallots and parsley.

Cooking

    Sauté Aromatics

    In a large pot, heat olive oil over medium heat. Add the minced garlic and chopped shallots, cooking until softened and fragrant, about 3-4 minutes.

    Add Wine or Tomato Sauce

    Pour in the white wine or tomato sauce, and bring to a simmer. Allow it to cook for 2-3 minutes to meld the flavors.

    Add Shellfish

    Increase the heat to high and add the cleaned clams or mussels to the pot. Cover and cook for 5-7 minutes until the shellfish have opened, shaking the pot occasionally.

    Season and Serve

    Once the shellfish are cooked, stir in chopped parsley and season with red pepper flakes, salt, and black pepper to taste. Serve hot with crusty bread for dipping.
