Method
Pasta Preparation
- 1
Cook the Shell Pasta
Bring a large pot of salted water to a boil. Add the shell pasta and cook according to package instructions, usually about 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
- 2
Drain the Pasta
Once the pasta is cooked, reserve about 1/2 cup of the pasta water, then drain the rest. Set the pasta aside.
Tomato Sauce Preparation
- 3
Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- 4
Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried basil, salt, black pepper, and sugar. Bring the sauce to a simmer.
- 5
Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. If the sauce becomes too thick, add reserved pasta water a little at a time until desired consistency is reached.
- 6
Combine with Pasta
Once the sauce is ready, add the cooked shell pasta to the skillet. Toss to combine the pasta with the sauce evenly. Allow it to heat through for about 2-3 minutes.
- 7
Serve
Remove from heat and stir in grated Parmesan cheese. Serve hot, garnished with fresh chopped basil if desired.
