Prepare the Artichokes
Begin by trimming the artichokes. Cut off the top third of each artichoke and remove the tough outer leaves. Cut the stems to about an inch long. If desired, rub the cut parts with lemon juice to prevent browning.

Cook the Artichokes
In a large pot, bring salted water to a boil. Add the prepared artichokes and cook for about 15-20 minutes or until tender. Drain and cool slightly before cutting them in half lengthwise.

Sauté the Ingredients
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Artichokes and Peppers
Add the halved artichokes and roasted red peppers to the skillet. Season with salt and black pepper. Sauté for another 5-7 minutes, stirring occasionally until the artichokes are golden brown.

Add Capers and Lemon Juice
Stir in the capers and lemon juice. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
