Prepare Ingredients

    Cook the Pasta

    In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Meat

    While the pasta is cooking, chop the bacon and Italian sausage into bite-sized pieces.

    Chop the Onion

    Peel and finely chop the onion.

    Prepare the Sauce

    In a bowl, whisk together the egg yolks, grated Parmesan cheese, salt, and black pepper until well combined.

Cook the Dish

    Cook the Bacon and Sausage

    In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Add the sausage and cook until browned and cooked through, about another 5 minutes.

    Add the Onion

    Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.

    Combine Pasta and Sauce

    Add the drained penne pasta to the skillet and toss to combine with the meat and onion mixture. Remove the skillet from heat.

    Add Egg Mixture

    Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

Serve

    Plate the Dish

    Divide the Penne Carbonara into serving bowls. Top with additional grated Parmesan cheese and freshly cracked black pepper to taste.
