Crust Preparation

    Prepare the Crust

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup to compact it. Preheat the oven to 350°F (175°C).

    Bake the Crust

    Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and set aside to cool.

Cheesecake Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and mix well.

    Add Sour Cream and Vanilla

    Mix in the sour cream and vanilla extract until fully blended.

    Incorporate Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

    Add Flour

    Gently fold in the all-purpose flour until just incorporated.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the oven at 325°F (165°C) for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour.

    Chill the Cheesecake

    Remove from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight for best results.

Topping Preparation

    Prepare the Berries

    Wash and dry the fresh berries. If using strawberries, slice them into halves or quarters.

    Garnish the Cheesecake

    Before serving, top the chilled cheesecake with the fresh berries and mint leaves for decoration.
