Cannoli Shells Preparation

    Make the dough

    In a mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well. Add in the unsalted butter, egg yolk, and white wine (or vinegar) and mix until a dough forms.

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll out the dough

    After resting, divide the dough into quarters. Roll out one portion at a time to about 1/8-inch thickness. Use a round cutter (about 3 inches in diameter) to cut out circles.

    Wrap each circle around a cannoli tube, sealing the edges with a bit of water. Repeat with remaining dough.
