    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Cook the Meat

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent. Add the ground meat, breaking it apart with a spoon. Cook until browned and cooked through. Drain any excess fat.

    Add Seasonings

    Stir in the dried oregano, dried basil, salt, and black pepper to taste. Mix in the light tomato sauce, and let it simmer for about 5 minutes.

    Prepare the Ricotta Mixture

    In a bowl, combine the ricotta cheese, grated Parmesan cheese, and the egg. Mix well until smooth.

    Boil the Noodles

    In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and rinse under cold water to prevent sticking.

    Assemble the Lasagna

    In a 9x13 inch baking dish, spread a thin layer of meat sauce on the bottom. Place 4 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by a layer of meat sauce, and a third of the shredded mozzarella cheese. Repeat the layers, finishing with a final layer of noodles, meat sauce, and the remaining mozzarella cheese on top.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

    Let it Rest

    Remove the lasagna from the oven and let it rest for about 10 minutes before slicing and serving.

    Prepare the Salad

    In a large salad bowl, combine the mixed salad greens, halved cherry tomatoes, cucumber slices, and thinly sliced red onion.

    Make the Dressing

    In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper to taste.

    Toss the Salad

    Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
