Prepare Artichokes
Rinse the fresh artichokes under cold water to remove any dirt. Trim the stems to about 1 inch and remove the tough outer leaves at the base. Cut the artichokes in half lengthwise and remove the fuzzy choke in the center using a spoon.

Prepare Lemon Water
Fill a large bowl with water and squeeze the juice of one lemon into it. Add the used lemon halves into the bowl as well. This will prevent the artichokes from browning.

Pre-cook Artichokes
Submerge the prepared artichoke halves in the lemon water for about 10 minutes. This helps to tenderize them before grilling.

Make Garlic Butter
In a small saucepan, melt the unsalted butter over low heat. Add minced garlic (about 4 cloves) and cook for 2-3 minutes until fragrant, but do not let it brown. Remove from heat and stir in capers, salt, and black pepper.

Grill Artichokes
Remove the artichokes from the lemon water and pat them dry. Place them cut-side down on the grill. Grill for about 5-7 minutes until they have nice grill marks. Flip them over and brush the cut sides with the garlic butter mixture. Continue grilling for another 5-7 minutes, or until tender.

Serve
Remove the grilled artichokes from the grill and transfer them to a serving platter. Drizzle with any remaining garlic butter and serve warm with lemon wedges on the side.
