Method

Preparing the Marinara Sauce

    Heat the Olive Oil

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add 2 minced garlic cloves to the oil and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Pour in the 15 oz can of crushed tomatoes, 1 tsp dried oregano, 1 tsp salt, 1 tsp black pepper, and 1 tsp sugar. Stir to combine.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for 20 minutes, stirring occasionally.

    Finish with Basil

    Stir in 1 tbsp of chopped fresh basil just before serving. Set aside.

Frying the Calamari

    Prepare the Coating

    In a bowl, mix together 1 cup all-purpose flour, 1 cup cornstarch, 1 tsp salt, 1 tsp black pepper, and 1 tsp paprika.

    Heat the Oil

    In a large, deep skillet or pot, heat 2 cups of olive oil over medium-high heat until hot (about 375°F or 190°C).

    Coat the Calamari

    Dredge the 1 pound of calamari rings in the flour mixture until evenly coated.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes until golden brown.

    Add Hot Peppers

    In the last minute of frying, add the sliced hot peppers to the oil to fry them lightly.

    Drain and Serve

    Remove the fried calamari and hot peppers from the oil and drain on paper towels. Serve immediately with the marinara sauce.
