Preparing the Eggplant Fries

    Prepare the Eggplant

    Preheat your oven to 425°F (220°C). Slice the eggplant into fry-shaped sticks, about 1/4 inch thick.

    Salt the Eggplant

    Place the sliced eggplant in a colander and sprinkle with salt. Let it sit for about 30 minutes to draw out moisture.

    Rinse and Dry

    Rinse the eggplant slices under cold water to remove excess salt and pat them dry with paper towels.

    Coat the Fries

    In a bowl, mix cornstarch, garlic powder, black pepper, and half of the parmesan cheese. Coat each eggplant slice in the mixture.

    Bake the Fries

    On a baking sheet lined with parchment paper, arrange the coated eggplant fries in a single layer. Drizzle with olive oil. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden and crispy.

Making the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Pour in the canned crushed tomatoes, then add oregano, basil, salt, black pepper, and sugar. Stir to combine.

    Simmer the Sauce

    Bring the sauce to a gentle simmer. Reduce the heat and let it cook for about 15-20 minutes, stirring occasionally, until thickened.

    Serve

    Once the fries are done baking, serve them hot with the marinara sauce for dipping and sprinkle the remaining parmesan cheese on top.
