Method

Preparation

  1. 1

    Clean the Clams

Place the fresh clams in a bowl of cold water and let them soak for about 30 minutes to remove any sand or grit. After soaking, scrub the clams under running water to ensure they are clean.

  2. 2

    Chop Ingredients

Mince the garlic cloves and finely chop the fresh parsley. If using, cut the lemon into wedges and set aside.

Cooking

  1. 3

    Heat the Olive Oil

In a large pot or pan, heat the olive oil over medium heat. Allow the oil to warm for about 1-2 minutes.

  2. 4

    Sauté Garlic

Add the minced garlic to the heated olive oil and sauté for about 1-2 minutes until fragrant but not browned.

  3. 5

    Add Clams

Carefully add the cleaned clams into the pot. Stir to coat them with the garlic and oil.

  4. 6

    Steam the Clams

Cover the pot with a lid and let the clams steam for about 5-7 minutes until they have opened up. Discard any clams that do not open.

  5. 7

    Add Parsley and Season

Once the clams are cooked, remove the pot from heat. Stir in the chopped parsley and, if desired, add red pepper flakes for spice.

  6. 8

    Serve

Serve the clams hot, garnished with lemon wedges on the side for squeezing over the top.
