Chicken Parmesan

Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, black pepper, and Italian seasoning.

Breading the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs. Dredge each chicken breast in flour, dip it in the egg, and then coat it with bread crumbs.

Sauté the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown.

Add Sauce and Cheese
Transfer the browned chicken to a baking dish. Spoon light tomato sauce over each piece and sprinkle shredded mozzarella cheese on top. Bake in the oven for 15-20 minutes, or until the cheese is bubbly and golden.

Cook the Pasta
In a large pot, bring water to a boil. Add salt and then the pasta. Cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.

Prepare the Salad
In a large bowl, combine mixed greens, cherry tomatoes, and sliced cucumber. Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper to taste. Toss to combine.
