Focaccia Bread Preparation

    Make the Dough

    In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy. Add flour, olive oil, and salt. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and allow it to rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Focaccia

    Once risen, punch down the dough, then spread it onto a greased baking sheet to about 1 inch thickness. Cover and let rise for another 30 minutes.

    Preheat and Prepare for Baking

    Preheat your oven to 425°F (220°C). Use your fingers to dimple the surface of the dough and drizzle with olive oil, then sprinkle with salt.

    Bake the focaccia for 20-25 minutes or until golden brown. Let it cool slightly before cutting into slider-sized pieces.

    Season the chicken breasts with salt and pepper. Set up a breading station with flour, beaten eggs, and bread crumbs mixed with grated Parmesan cheese.

    Dip each chicken breast in flour, then in egg, and finally coat with the breadcrumb mixture.
