For the Cannoli Shells

    Prepare the Dough

    In a mixing bowl, combine the flour, sugar, cocoa powder, and salt. Mix well. Add the butter and blend until the mixture resembles coarse crumbs. Stir in the wine and egg yolk until a dough forms. Knead the dough on a floured surface until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll and Cut Shells

    After resting, roll out the dough to about 1/8 inch thick. Cut into circles about 4 inches in diameter. Wrap each circle around a cannoli tube, sealing the edges with a little water.

    Fry the Shells

    Heat the oil in a deep frying pan to 350°F (175°C). Fry the wrapped cannoli shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the tubes.

For the Filling

    Prepare the Filling

    In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth. Fold in the chopped cherries and chocolate chips if using.

    Fill the Shells

    Using a piping bag, fill each cooled cannoli shell with the ricotta cherry filling. Ensure they are filled completely.

    Garnish the Cannoli

    Roll the ends of the filled cannoli in chopped pistachios. Dust the tops with powdered sugar before serving.
