Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of pasta cooking water. Drain the pasta and set aside.

Preparing Broccoli Rabe

    Trim and Blanch

    Trim the ends of the broccoli rabe and blanch in boiling water for about 2-3 minutes until bright green. Remove and immediately place in ice water to stop cooking. Drain and chop into bite-sized pieces.

    Prepare Garlic

    Mince the garlic cloves and set aside.

Cooking the Dish

    Sauté Garlic and Broccoli Rabe

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped broccoli rabe and sauté for another 3-4 minutes.

    Add Tomatoes and Seasoning

    Add the cherry tomatoes and red pepper flakes to the skillet. Cook for about 2-3 minutes until the tomatoes begin to soften. Season with salt and black pepper to taste.

    Combine with Pasta

    Add the cooked penne pasta to the skillet. Pour in a little reserved pasta water to help combine everything. Toss well to mix all ingredients and heat through for another 2-3 minutes.

    Divide the pasta among serving plates and drizzle with additional olive oil if desired. Serve hot.
