Anchovy Preparation

Herbs and Cheese

Method

Preparation

  1. 1

    Prepare the Anchovies

Open the canned anchovies, drain the oil and chop them roughly. Set aside.

  2. 2

    Mince the Garlic

Peel and mince the garlic cloves finely. This will enhance the flavor of the sauce.

Cooking the Sauce

  1. 3

    Combine Ingredients

In a medium saucepan over medium heat, add the minced garlic and cook until fragrant (about 1-2 minutes).

  2. 4

    Add Tomato Sauce

Pour in the light tomato sauce and stir well to combine with the garlic.

  3. 5

    Incorporate Anchovies

Add the chopped anchovies to the sauce. Stir constantly until the anchovies break down and dissolve into the sauce.

  4. 6

    Season the Sauce

Sprinkle in the dried oregano, dried basil, black pepper, and salt to taste. Allow the sauce to simmer for about 10 minutes on low heat.

Final Touches

  1. 7

    Add Romano Cheese

Once the sauce is thickened and flavors are well combined, stir in the grated Romano cheese until melted and incorporated.

  2. 8

    Serve

Remove from heat and serve warm over your choice of pasta, garnished with additional Romano cheese and fresh herbs if desired.
