Prepare the Ingredients
Preheat the oven to 400°F (200°C). Wash and halve the baby potatoes. Slice the red onion into thin wedges. Rinse the grape tomatoes and set aside.

Season the Potatoes
In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, black pepper, and dried thyme until well coated.

Roast the Potatoes
Spread the seasoned potatoes on a large baking sheet in a single layer. Roast in the preheated oven for 20 minutes.

Prepare the Salmon and Vegetables
While the potatoes are roasting, mix the remaining 2 tablespoons of olive oil, lemon juice, minced garlic, and capers in a small bowl. Place the salmon fillets on a separate baking sheet and arrange the spinach, grape tomatoes, and red onion around them.

Season the Salmon
Drizzle the olive oil mixture over the salmon fillets and vegetables, ensuring everything is well coated.

Combine and Bake
After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven and add the salmon and vegetables to the oven. Roast everything for an additional 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork and the potatoes are tender.
